Pancake Muffins Recipe

These pancake muffins are easy to prepare in advance & customize and my kids can grab them and go! 

I’ve included some of our favorite toppings below but the possibilities are endless. 

Here is the recipe for the pancake batter…or if you’re like me you can use store-bought pancake mix.
 

Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

2 1/2 tsp baking powder

1/2 tsp kosher salt

2 cups milk

2 eggs

1/4 cup unsalted butter, melted

1 tsp pure vanilla extract

Topping of choice

Toppings

Banana Chocolate Chip (1 cup of diced banana & ½ cup of chocolate chips)

Blueberry (1 cup of blueberries)

M&Ms (1 cup of M&Ms)

Directions

Preheat oven to 350 and grease muffin pan

In a large bowl, combine dry ingredients (flour, sugar, baking powder & salt)

In a separate bowl, combine wet ingredients (milk, eggs, butter & vanilla)

Add wet ingredients to dry and spoon evenly into 18 muffin cups

Top with your topping of choice

Bake 10-12 minutes or until golden brown
